  • The Pasta: (My preference Elbow Macaroni): While elbow macaroni is my personal suggestion it is just a classic for the meal. But don’t be afraid to experiment. Shells,angel hair , or even penne can add unique textures to your dish. Personally, I like the good ole fashioned elbow pasta. But whatever that you prefer, do it that way.
  • The Creamy Dream: Evaporated Milk: This is our secret weapon for achieving that consistent sauce. It’s better than regular milk, giving our mac and cheese a different texture. You only need one can of this. According to the health line “it is a healthier milk than plain milk.”
  • The Cheese: Mild and Sharp Cheddar (and Beyond): For the cheese I prefer mild, sharp, mozzarella. But it does not have to end there. From my past experience making this you have to use the cheese you like the best. It is all about personal preference. Another key item is to shred your own cheese. It does take some extra time but it is worth it. It has a better texture than the plain cheese that comes in the bag. According to Delish, sharp is the best cheese to use for the recipe. But at the end of the day it always comes down to you. 
  • The Binding Force: Eggs: I use about 4-6 eggs depending on how much Macaroni you plan on making it varies. 
  • The Flavor Base: Butter or Margarine: This adds richness and creates a smooth, buttery base for our cheese sauce. It does not matter which one you prefer they both essentially do the same thing
  • The Spice: Salt, Pepper, and Paprika: These seasonings are essential for enhancing the flavors of our mac and cheese. But you can put any seasoning that you want in them. At the end of the day it is all about personal preference. The paprika is debatable in the mac and cheese world. Personally, I like it mostly because it makes the color but I also do not ever taste the paprika when I put it in. 

The Golden Journey: Step-by-Step to Mac and Cheese Perfection

Now, let’s transform these ingredients into a golden masterpiece. First off I will get a big bowl to place all the ingredients into.

  1. Preheat with Precision (350 Degrees F): A preheated oven is optional. I usually do not do this but it is based on your personal preference. 
  2. Pasta Perfection: Cook your pasta al dente or soft. Those are just two different types of pasta. Al dente is a harder content of pasta while soft is just soft. I personally like soft.
  3. The Creamy Base: In a large bowl, combine the cooked pasta. Melt the butter or margarine and pour it over the pasta and begin to stir until it is spread out through the bowl, followed by the paprika, salt, and pepper. Once you put your seasonings in, continue to stir again to spread them all throughout as well.
  4. Dairy and Egg: Pour in the evaporated milk and crack in the eggs. Mix thoroughly to combine all the ingredients. It should sound wet like a good noise while mixing it.
  5. Shred Cheese:As you do that, you should start to shred and add your cheese to the bowl. Add a little cheese, mix it up and make that a continuous process. Be sure to save a decent amount of cheese for when you layer it later on.
  6. Cheese It Up!: Add the diced mild and sharp cheddar cheese (or your chosen cheese blend) and mix gently.
  7. The Taste Test: This is where you get to be the chef! Taste the mixture and adjust the seasoning as needed. To be sure that you like how it tastes because the bowl you mixed is how it is going to taste. 
  8. Adding to the bowl: Pour half the mixture into a baking dish and add some cheese then pour the rest and layer the rest of the cheese.
  9. Baking: Wrap the baking dish with foil before you put it into the oven and put in the oven for about 25 mins. Then take the foil off and add paprika on top so the color can make it look more golden then put it back in the oven for another 15 minutes minimum. THen you wait until you think it is ready.
  10. Rest: Let the mac and cheese rest for about 20 minutes before serving. This allows the Mac and cheese to cool off and not be super messy.
